
APPLE CRISP
3 Cups of Apples
1/4 Cup butter
1/2 Cup Brown sugar
1/2 Cup oat
1/2 Cup Flour
1TABL. Lemon juice
2 TABL of Sugar mixed with 1 TABL Cinnamon
Peel and slice apples (remove cores).
Place in an 8x8 pan that has been sprayed with Pam.
Add lemon juice and toss apples to coat them.
Cover with the sugar and cinnamon mixture, toss again and put apples in the pan and set aside.
To make crumble topping-
Mix butter, flour, brown sugar and oats in a bowl. Mix with your hands until crumbly like oatmeal (similar to a pie crust technique)
Sprinkle evenly on top of apples.
Dab top with small chunks of butter (1-2 TABL worth)
Bake at 375 degrees covered with foil for 15 minutes.
Uncover and bake 10-15 Minutes more until apples are tender and crumble is golden brown.
Potato Gnocchi
4 Cups instant potatoes
1 Tablespoon salt
4 Cups boiling water
2 eggs (slightly beaten)
7 1/2 cups flour
In a large mixing bowl, mix potatoes, salt and water. Let cool. Add Eggs mix until smooth.
Add flour and mix just like a pie crust, rubbing the mixture in your hands until it feels like oatmeal texture, then press together. (do not kneed)
When dough is together, let it rest 5 to 10 minutes.
Roll dough into a rectangle, cut rectangle into strips.
Roll strips into snakes and cut into bite size pieces Poke each dough ball in its center.
In a pot of boiling water, add the pasta and cook 8 to 10 minutes.
